Cucumber Mint Chia Pudding

A light and refreshing Cucumber Mint Chia Pudding that is perfect for a guilt-free dessert or snack.

  • 2 cups almond milk
  • 1 cucumber finely chopped
  • 1/4 cup fresh mint leaves chopped
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, combine chia seeds and almond milk. Stir well and let sit for 10 minutes.
  2. Add in the chopped cucumber, mint leaves, honey or maple syrup, and vanilla extract.
  3. Mix everything until well combined.
  4. Cover and refrigerate for at least 2 hours, or overnight for a thicker consistency.
