- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1 package (8 oz) cream cheese, softened
- 1 cup pumpkin puree
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp salt
- Preheat the oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, melted butter, and sugar; mix well.
- Press the mixture into the bottom of a greased mini muffin pan to form crusts.
- In another bowl, beat together cream cheese, pumpkin puree, eggs, vanilla, cinnamon, nutmeg, ginger, and salt until smooth.
- Scoop the pumpkin filling into the crusts, filling each cup about 2/3 full.
- Bake for 15-20 minutes, or until set.
- Let cool, then refrigerate for at least 2 hours before serving.
