  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 package (8 oz) cream cheese, softened
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar; mix well.
  3. Press the mixture into the bottom of a greased mini muffin pan to form crusts.
  4. In another bowl, beat together cream cheese, pumpkin puree, eggs, vanilla, cinnamon, nutmeg, ginger, and salt until smooth.
  5. Scoop the pumpkin filling into the crusts, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes, or until set.
  7. Let cool, then refrigerate for at least 2 hours before serving.
