Delicious Autumn Sausage Pasta Squash

  • 1 pound sausage
  • 2 cups pasta
  • 1 medium butternut squash
  • 3 cloves garlic
  • 1 teaspoon sage
  • 1 teaspoon thyme
  • 4 cups spinach
  • 1 cup Parmesan cheese

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the squash in half and scoop out the seeds.
  3. Place the squash on a baking sheet, cut side down, and roast for 30 minutes.
  4. In a skillet, cook the sausage until browned.
  5. Add garlic, sage, and thyme, and cook for another 2 minutes.
  6. Boil the pasta according to package instructions.
  7. Once the squash is done, scoop the flesh into the sausage mixture.
  8. Add cooked pasta and spinach, and stir until combined.
  9. Top with Parmesan cheese and serve.
