  • 1/4 cup rolled oats
  • 1/4 cup cold butter

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the pumpkin puree, sugar, oil, eggs, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
  5. In a small bowl, mix brown sugar, oats, and cold butter to make the crumb topping.
  6. Fill each muffin liner with the batter and sprinkle the crumb topping over each muffin.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool for a few minutes before serving.
