Dump-and-Bake Chicken Tzatziki with Rice

A quick and delicious weeknight meal featuring tender chicken and a refreshing tzatziki sauce served with rice.

  • 1 pound chicken thighs
  • 1 cup rice
  • 1 cup tzatziki sauce
  • 2 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large baking dish, combine rice, chicken broth, garlic powder, oregano, salt, and pepper.
  3. Place the chicken thighs on top of the rice mixture and pour tzatziki sauce over the chicken.
  4. Cover the dish with aluminum foil and bake for 45 minutes.
  5. Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the rice is tender.
  6. Serve warm and enjoy!
