Easy Ground Beef Enchiladas

  • 1 pound ground beef
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 can (15 ounces) enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef, onion, and garlic until the meat is browned.
  3. Add the chili powder and cumin, and stir to combine.
  4. Spread a little enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture and some cheese, then roll them up and place them seam-side down in the dish.
  6. Pour the remaining enchilada sauce over the tortillas and top with the cheese.
  7. Bake for 20-25 minutes until the cheese is bubbly.

Notes

  • Serve with sour cream on top for added flavor.
  • Feel free to add beans or corn for additional texture.
