Easy Roasted Garlic Soup

A delightful and comforting roasted garlic soup that warms the soul.

Ingredients

  • 2 bulbs garlic
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tops off the garlic bulbs, drizzle with olive oil, and wrap in foil. Roast for 30-35 minutes.
  3. In a large pot, sauté the chopped onion until translucent.
  4. Once the garlic is roasted, squeeze the cloves into the pot with the onion.
  5. Add the vegetable broth and bring to a simmer. Let cook for 15 minutes.
  6. Blend the soup until smooth, then stir in the heavy cream.
  7. Season with salt and pepper, and serve hot, garnished with fresh parsley.

Notes

  • This soup can be made vegan by using coconut cream instead of heavy cream.
  • You can add croutons for extra texture.
