Easy Spicy Baked Potato Soup

This Easy Spicy Baked Potato Soup is a delicious blend of flavors from turkey bacon and chicken ham, perfect for a comforting meal.

Ingredients

  • 4 large potatoes, peeled and diced
  • 4 slices turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add the onion and garlic to the pot and sauté until translucent.
  3. Stir in the diced potatoes, chicken ham, and chicken broth. Bring to a boil.
  4. Reduce heat and let simmer until potatoes are tender, about 15-20 minutes.
  5. Purée the soup with an immersion blender until smooth.
  6. Stir in heavy cream, paprika, and cayenne pepper. Adjust seasoning with salt and pepper.
  7. Top with crispy turkey bacon before serving.

Notes

  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
  • For extra spice, add more cayenne pepper.
