1 tablespoon vegetable oil
1 pound chicken breast, sliced
1 can (13.5 oz) coconut milk
2 cups chicken broth
2 tablespoons red curry paste
1 tablespoon fish sauce
1 cup bell peppers, sliced
2 cups spinach
1 tablespoon lime juice
1 tablespoon fresh cilantro, chopped
Instructions
In a large pot, heat the vegetable oil over medium heat. Add the chicken and cook until browned.
Stir in the red curry paste and cook for 1 minute.
Add the coconut milk and chicken broth, stirring to combine.
Bring to a simmer and then add the bell peppers.
Cook for 10 minutes, then add the spinach and fish sauce.
