  • 1 pound chicken breast
  • 4 cups chicken broth
  • 1 can coconut milk
  • 1 onion, chopped
  • 2 carrots, sliced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon red curry paste
  • 1 cup mushrooms, sliced
  • 1 cup spinach
  • 2 tablespoons cilantro, chopped

Instructions

  1. In a large pot, sauté onion, garlic, and ginger until aromatic.
  2. Add chicken and brown on all sides.
  3. Pour in chicken broth and bring to a simmer.
  4. Stir in coconut milk, soy sauce, fish sauce, and red curry paste.
  5. Add carrots, bell pepper, and mushrooms. Cook until vegetables are tender.
  6. Finish with spinach and lime juice. Garnish with cilantro before serving.

Notes

  • Use rotisserie chicken to save time.
  • Adjust the spice level by adding more or less curry paste.
