Easy Tomato Basil Galette with Goat Cheese

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 46 tablespoons ice water
  • 2 cups ripe tomatoes, sliced
  • 1 cup goat cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 1 teaspoon balsamic vinegar
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Stir in ice water, a tablespoon at a time, until the mixture forms a ball. Wrap in plastic and refrigerate for 30 minutes.
  4. Roll out the dough on a floured surface to fit a pie dish. Transfer to the dish and trim excess.
  5. Layer sliced tomatoes in the crust, sprinkle with goat cheese, basil, and drizzle with balsamic vinegar.
  6. Fold the edges of the crust over the filling, leaving the center exposed.
  7. Brush the crust with the beaten egg.
  8. Bake for about 40-45 minutes, until the crust is golden brown and the tomatoes are soft.
  9. Let cool slightly before slicing and serving.
