Egg and Avocado Breakfast Sandwich

Ingredients

  • 2 slices whole grain bread
  • 1 ripe avocado
  • 2 large eggs
  • 1 tablespoon olive oil
  • salt to taste
  • pepper to taste
  • 1 handful spinach
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Crack the eggs into the skillet and cook to your desired doneness.
  3. While the eggs are cooking, toast the bread.
  4. Slice the avocado and spread it on the toasted bread.
  5. Once the eggs are ready, place them on top of the avocado.
  6. Add salt, pepper, and red pepper flakes if using.
  7. Top with fresh spinach and cover with the other slice of bread.
