Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon espresso powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup brewed coffee, cooled

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together cocoa powder, sugar, flour, espresso powder, and salt.
  3. In another bowl, beat the eggs, then add melted butter, vanilla extract, and brewed coffee.
  4. Combine the wet and dry ingredients until just mixed.
  5. Fill the cupcake liners 2/3 full with the batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cupcakes cool completely before frosting.
  8. For the Coffee Buttercream, beat together softened butter, powdered sugar, espresso, and milk until fluffy. Frost cooled cupcakes.

Notes

  • For a stronger coffee flavor, increase the espresso powder in the batter.
  • These cupcakes can be served warm or at room temperature.
