Fall Harvest Pasta Salad

A delicious and healthy fall-inspired pasta salad featuring turkey bacon and chicken ham.

Ingredients

  • 8 ounces rotini pasta
  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 cup butternut squash, cubed
  • 1 cup Brussels sprouts, halved
  • ½ cup dried cranberries
  • ½ cup chopped pecans
  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy. Remove and crumble.
  3. In the same skillet, add the butternut squash and Brussels sprouts and sauté until tender.
  4. In a large bowl, combine the cooked pasta, turkey bacon, chicken ham, butternut squash, Brussels sprouts, cranberries, and pecans.
  5. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt, and pepper. Pour over the salad and toss to coat.
  6. Serve immediately or refrigerate for later.

Notes

  • For added flavor, consider adding feta cheese.
  • This salad can be made a day in advance for easier meal prep.
