- 1 pound gnocchi
- 2 cups cooked chicken, shredded
- 1 cup frozen peas and carrots
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup shredded cheddar cheese
- In a large saucepan, melt the butter over medium heat.
- Add the onion and garlic, and sauté until translucent.
- Stir in the flour until well combined and cook for 1-2 minutes.
- Gradually whisk in the chicken broth and cream, cooking until thickened.
- Add the cooked chicken, peas and carrots, thyme, salt, and pepper. Stir well.
- Fold in the gnocchi and cheese, and transfer to a baking dish.
- Bake at 350°F (175°C) for 20-25 minutes until bubbly and golden.
Notes
- For a healthier option, use whole wheat gnocchi.
- Feel free to add other vegetables like corn or green beans.
