Gnocchi Chicken Pot Pie

A warm and comforting dish that combines tender chicken, fluffy gnocchi, and a rich, creamy sauce.

  • 1 pound gnocchi
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas and carrots
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large saucepan, melt the butter over medium heat.
  2. Add the onion and garlic, and sauté until translucent.
  3. Stir in the flour until well combined and cook for 1-2 minutes.
  4. Gradually whisk in the chicken broth and cream, cooking until thickened.
  5. Add the cooked chicken, peas and carrots, thyme, salt, and pepper. Stir well.
  6. Fold in the gnocchi and cheese, and transfer to a baking dish.
  7. Bake at 350°F (175°C) for 20-25 minutes until bubbly and golden.

Notes

  • For a healthier option, use whole wheat gnocchi.
  • Feel free to add other vegetables like corn or green beans.
