Golden Spaghetti Squash Hash Browns

A delightful and healthy twist on hash browns using spaghetti squash and turkey bacon.

Ingredients

  • 1 medium spaghetti squash
  • 4 strips turkey bacon
  • 1 small onion, diced
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half and scoop out the seeds.
  3. Place the squash cut-side down on a baking sheet and roast for about 40 minutes.
  4. Meanwhile, cook the turkey bacon in a pan until crispy. Remove and chop into pieces.
  5. Sauté onion and garlic in the same pan until translucent.
  6. Once the squash is done, scrape the insides with a fork to create spaghetti-like strands.
  7. In a large bowl, combine the spaghetti squash, chopped turkey bacon, sautéed onion and garlic, salt, pepper, paprika, and parsley.
  8. Form the mixture into patties and fry in olive oil until golden brown on both sides.
  9. Serve warm and enjoy!

Notes

  • Feel free to add cheese for extra flavor.
  • Store leftovers in an airtight container in the fridge.
