  • 2 tablespoons olive oil
  • 2 teaspoons lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup tzatziki sauce

Instructions

  1. In a bowl, marinate the chicken thighs with olive oil, lemon juice, oregano, garlic powder, onion powder, salt, and pepper for at least 30 minutes.
  2. Preheat the grill or skillet over medium-high heat.
  3. Grill or cook the marinated chicken for 6-7 minutes on each side or until fully cooked and golden brown.
  4. Remove from heat and let it rest for a few minutes, then slice the chicken.
  5. In serving bowls, layer mixed greens, sliced chicken, cherry tomatoes, cucumber, red onion, and feta cheese.
  6. Drizzle with tzatziki sauce before serving.
