Greek-Inspired Cold Pasta

A refreshing Greek-inspired cold pasta dish, perfect for warm weather and featuring turkey bacon and vibrant vegetables.

  • 8 ounces rotini pasta
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and cool.
  2. In a skillet, cook the turkey bacon until crispy. Let it cool, then chop into pieces.
  3. In a large bowl, combine the cooled pasta, turkey bacon, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  4. In a separate small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Feel free to add your favorite vegetables or herbs.
  • For a vegan version, omit the turkey bacon and feta cheese.
