Green Goddess Vegetable Pasta

Ingredients

  • 8 ounces pasta of your choice
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 avocado
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh parsley leaves
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • salt to taste
  • pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. In the last 3 minutes of cooking, add the broccoli florets.
  3. Drain the pasta and broccoli and set aside.
  4. In a blender, combine avocado, basil, parsley, lemon juice, olive oil, salt, and pepper. Blend until smooth.
  5. In a large bowl, toss the pasta and broccoli with the Green Goddess sauce.
  6. Garnish with cherry tomatoes and serve immediately.
