  • 1 pound chicken breast, cubed
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • skewers (if wooden, soaked in water)

Instructions

  1. In a bowl, mix coconut milk, soy sauce, honey, lime juice, garlic powder, ginger, salt, and black pepper.
  2. Place the chicken cubes in the marinade and let sit for at least 30 minutes.
  3. Preheat grill to medium heat.
  4. Thread the marinated chicken onto skewers.
  5. Grill the skewers for about 10-15 minutes, turning occasionally until cooked through.
  6. Remove from grill and let rest for a few minutes before serving.

Notes

  • For extra flavor, marinate overnight.
  • Serve with a side of grilled vegetables.
