- 1 cup quinoa
- 2 cups water
- 1 can chickpeas, drained and rinsed
- 1 medium sweet potato, diced
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups kale, chopped
- ¼ cup tahini
- 2 tablespoons lemon juice
- 1 tablespoon maple syrup
- 1–2 tablespoons water (to thin dressing)
- Preheat the oven to 400°F (200°C).
- In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- While quinoa cooks, toss sweet potato with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
- In a large bowl, combine chickpeas, roasted sweet potato, and kale.
- In a separate bowl, whisk together tahini, lemon juice, maple syrup, and water to create the dressing.
- Once quinoa is cooked, fluff it with a fork and add it to the vegetable mixture. Drizzle with tahini dressing and toss to combine.
