- 1/3 cup melted coconut oil
- 1/2 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/2 cups whole wheat flour
- 1/2 cup dark chocolate chips
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mash the bananas until smooth.
- Stir in the melted coconut oil, honey, eggs, and vanilla extract until well combined.
- In a separate bowl, mix the dry ingredients: baking soda, salt, cinnamon, and flour.
- Gradually add the dry mixture to the wet mixture, stirring just until combined.
- Fold in the chocolate chips.
- Spoon the batter into the muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Let cool before serving.
