Healthy Banana Chocolate Chip Muffins

Ingredients

  • 3 ripe bananas
  • 1/3 cup melted coconut oil
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 cups whole wheat flour
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the bananas until smooth.
  3. Stir in the melted coconut oil, honey, eggs, and vanilla extract until well combined.
  4. In a separate bowl, mix the dry ingredients: baking soda, salt, cinnamon, and flour.
  5. Gradually add the dry mixture to the wet mixture, stirring just until combined.
  6. Fold in the chocolate chips.
  7. Spoon the batter into the muffin tin, filling each cup about 3/4 full.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Let cool before serving.
