Healthy Chicken Tortilla Soup

A deliciously healthy take on traditional tortilla soup that’s easy to make and full of flavor.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 2 carrots diced
  • 1 pound cooked chicken shredded
  • 4 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • 1 cup corn (frozen or canned)
  • 1 lime juiced
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, garlic, bell pepper, and carrots. Sauté until soft.
  3. Stir in the shredded chicken, chicken broth, diced tomatoes, chili powder, cumin, paprika, and salt.
  4. Bring to a boil, then reduce heat and let simmer for about 20 minutes.
  5. Add corn and lime juice. Stir to combine and heat through.
  6. Serve hot, garnished with fresh cilantro.

Notes

  • For extra flavor, add jalapeños or hot sauce.
  • Can be made in advance and refrigerated for up to 3 days.
