Healthy One Pot Broccoli Mac & Cheese

A comforting and healthy twist on a classic mac and cheese, packed with broccoli and flavor.

Ingredients

  • 2 cups broccoli florets
  • 4 cups vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large pot, combine the elbow macaroni, broccoli florets, vegetable broth, garlic powder, onion powder, salt, and pepper.
  2. Bring to a boil over medium heat, then reduce to a simmer and cook until the pasta and broccoli are tender.
  3. Stir in the milk and cheddar cheese until melted and creamy.
