  • 4 strips turkey bacon
  • 1 cup corn kernels
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder

Instructions

  1. Cook the pasta according to package instructions, then drain and let cool.
  2. In a skillet, cook the turkey bacon until crispy. Crumble and set aside.
  3. In a large bowl, combine the cooled pasta, corn, avocado, cherry tomatoes, red onion, cilantro, and crumbled turkey bacon.
  4. In a small bowl, whisk together lime juice, olive oil, and chili powder.
  5. Pour the dressing over the pasta salad and toss gently to combine.
