Hearty Mushroom and White Bean Soup

A warm and filling soup perfect for chilly evenings, packed with mushrooms and white beans.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 can (15 ounces) white beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup spinach, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add sliced mushrooms and cook until browned.
  4. Stir in white beans, vegetable broth, and thyme. Season with salt and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in chopped spinach before serving.

Notes

  • For a creamier texture, blend a portion of the soup and then stir it back in.
  • Great to serve with crusty bread.
