Hidden Veggie Pasta Sauce

Ingredients

  • 1 can crushed tomatoes
  • 1 cup finely chopped carrots
  • 1 cup finely chopped spinach
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • salt to taste
  • pepper to taste

Instructions

  1. Heat the olive oil in a pan over medium heat.
  2. Add the minced garlic and sauté until fragrant.
  3. Add the chopped carrots and cook until softened.
  4. Stir in the crushed tomatoes and bring to a simmer.
  5. Add the spinach and oregano, cooking until the spinach wilts.
  6. Season with salt and pepper to taste.
  7. Blend the sauce until smooth if desired.
