Ingredients

  • 2 cups broccoli florets
  • 1 cup shredded low-fat cheddar cheese
  • 1 cup cooked chicken breast, shredded
  • 4 cups low-sodium chicken broth
  • 1 cup almond milk
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
  2. Add broccoli and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes or until broccoli is tender.
  3. Using an immersion blender, puree the soup until smooth.
  4. Stir in almond milk and shredded chicken. Heat through.
  5. Mix in shredded cheddar cheese until melted. Season with salt and peppers.
