Honey Feta Sweet Potato Rounds

An easy and delicious appetizer perfect for any gathering that combines the sweetness of roasted sweet potatoes with the tangy flavor of feta cheese.

Ingredients

  • 2 large sweet potatoes
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup honey
  • 1 tablespoon olive oil
  • 1 teaspoon cinnamon
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and slice the sweet potatoes into 1/2-inch rounds.
  3. Toss the sweet potato rounds in olive oil and sprinkle with salt and cinnamon.
  4. Place them on a baking sheet and bake for 25-30 minutes or until tender.
  5. Remove from the oven and drizzle with honey and sprinkle with feta cheese.
  6. Return to the oven for an additional 5 minutes to warm the toppings.
  7. Garnish with fresh parsley before serving.
