Hot Pink Beet, Berry & Almond Butter Smoothie

  • 1 medium beet, cooked and peeled
  • 1 cup mixed berries (fresh or frozen)
  • 2 tablespoons almond butter
  • 1 cup almond milk
  • 1 tablespoon honey or maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup ice (optional)

Instructions

  1. In a blender, combine the cooked beet, mixed berries, almond butter, almond milk, honey or maple syrup, vanilla extract, and ice if using.
  2. Blend until smooth and creamy.
  3. Taste and adjust sweetness if necessary.
  4. Pour into a glass and enjoy immediately.
