Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In a separate bowl, cream the butter and sugars until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated.
  6. If using, fold in the chopped pecans.
  7. Drop spoonfuls of dough onto the prepared baking sheet and flatten slightly.
