  • 3 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cornmeal
  • 4 ounces gorgonzola cheese
  • 2 cups water
  • ¼ cup heavy cream

Instructions

  1. In a large pot, heat olive oil over medium heat and brown the roast on all sides.
  2. Add onions and garlic, cooking until softened.
  3. Stir in beef broth, red wine, bay leaves, thyme, salt, and pepper.
  4. Cover and simmer for 3 hours or until tender.
  5. Remove roast and let rest before slicing.
  6. For polenta, bring water to a boil, slowly whisk in cornmeal, and cook until thickened.
  7. Stir in gorgonzola and heavy cream until smooth.
  8. Serve the pot roast over polenta.

Notes

  • For extra flavor, add carrots and celery to the pot roast.
