  • 1 can coconut milk
  • 2 cups water
  • 1 scallion, chopped
  • 1 Scotch bonnet pepper

Instructions

  1. Rinse the rice in cold water until the water runs clear.
  2. In a large pot, combine the rice, beans, onion, garlic, thyme, allspice, coconut milk, water, and scallion.
  3. Bring the mixture to a boil over medium heat.
  4. Add the Scotch bonnet pepper and reduce the heat to low.

  6. Remove the Scotch bonnet pepper before serving.
