- 1 cup long-grain rice
- 1 can red kidney beans
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon allspice
- 1 can coconut milk
- 2 cups water
- 1 scallion, chopped
- 1 Scotch bonnet pepper
- Rinse the rice in cold water until the water runs clear.
- In a large pot, combine the rice, beans, onion, garlic, thyme, allspice, coconut milk, water, and scallion.
- Bring the mixture to a boil over medium heat.
