Jammy Egg, Avocado & Pesto Toast: An Incredible Ultimate Recipe

A delightful and nutritious recipe that combines jammy eggs, creamy avocado, and flavorful pesto on crispy toast topped with turkey bacon.

Ingredients

  • 2 large eggs
  • 1 ripe avocado
  • 2 slices whole grain bread
  • 4 slices turkey bacon
  • 2 tablespoons basil pesto
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Bring a pot of water to a boil. Carefully add the eggs and cook for 6-7 minutes for a jammy yolk. Remove and cool in cold water.
  2. In a pan, cook the turkey bacon until crispy.
  3. While the bacon cooks, toast the bread slices.
  4. Mash the avocado in a bowl and season with salt and pepper.
  5. Spread the pesto on the toasted bread.
  6. Top the pesto toast with mashed avocado, bacon, and cut the jammy eggs in half to place on top.

Notes

  • For a kick, add some red pepper flakes on top before serving.
