Juicy Herb-Roasted Thanksgiving Turkey with Champagne & Citrus

  • 1 whole turkey (1214 pounds)
  • 1 cup fresh herbs (thyme, rosemary, parsley)
  • 1 cup butter, softened
  • 1 onion, quartered
  • 2 oranges, zested and juiced
  • 1 lemon, zested and juiced
  • 2 cups champagne or sparkling wine
  • 4 garlic cloves, minced
  • 2 tablespoons salt
  • 1 tablespoon black pepper

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a bowl, mix softened butter, herbs, garlic, orange and lemon zests, salt, and pepper.
  3. Gently loosen the skin of the turkey and spread the herb butter mixture underneath.
  4. Place the quartered onion, orange juice, and lemon juice inside the turkey cavity.
  5. Place the turkey in a roasting pan and cover it loosely with foil.
  6. Roast the turkey for about 3 hours, basting occasionally with champagne.
  7. Remove the foil and continue roasting for an additional hour or until the internal temperature reaches 165°F (74°C).
  8. Let the turkey rest for at least 30 minutes before carving.

Notes

  • For extra flavor, brine the turkey overnight in a mixture of water, salt, and herbs.
  • Use a meat thermometer to ensure accurate cooking.
