- 1 whole turkey (12–14 pounds)
- 1 cup fresh herbs (thyme, rosemary, parsley)
- 1 cup butter, softened
- 1 onion, quartered
- 2 oranges, zested and juiced
- 1 lemon, zested and juiced
- 2 cups champagne or sparkling wine
- 4 garlic cloves, minced
- 2 tablespoons salt
- 1 tablespoon black pepper
- Preheat your oven to 325°F (165°C).
- In a bowl, mix softened butter, herbs, garlic, orange and lemon zests, salt, and pepper.
- Gently loosen the skin of the turkey and spread the herb butter mixture underneath.
- Place the quartered onion, orange juice, and lemon juice inside the turkey cavity.
- Place the turkey in a roasting pan and cover it loosely with foil.
- Roast the turkey for about 3 hours, basting occasionally with champagne.
- Remove the foil and continue roasting for an additional hour or until the internal temperature reaches 165°F (74°C).
- Let the turkey rest for at least 30 minutes before carving.

- For extra flavor, brine the turkey overnight in a mixture of water, salt, and herbs.
