Lemon Chicken Orzo Soup

A light and refreshing lemon chicken orzo soup that is easy to make and full of flavor.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups spinach, chopped
  • 1 lemon, juiced and zested
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken breasts and cook until browned on both sides. Remove from pot and set aside.
  2. Add onion and garlic to the pot, stirring until the onion is translucent.
  3. Pour in the chicken broth and bring to a boil. Add orzo pasta and cook for about 8 minutes.
  4. Return the chicken to the pot, add spinach, lemon juice, and zest, and simmer for an additional 5 minutes.
  5. Season with salt and black pepper to taste. Serve warm.

Notes

  • This soup can be made ahead of time and stored in the refrigerator.
  • For a creamier soup, add a splash of cream before serving.
