Lemon Chicken Orzo Soup

A delicious and comforting bowl of lemon chicken orzo soup that warms you from the inside out.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 cup orzo pasta
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 lemon, juiced
  • 2 cups baby spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken breasts and cook until browned on both sides. Remove and set aside.
  2. Add onion, carrots, and celery to the pot. Sauté until softened, about 5 minutes.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the orzo, thyme, oregano, and the reserved chicken. Reduce heat and simmer for 10 minutes.
  6. Stir in lemon juice and baby spinach. Cook for an additional 2 minutes.
  7. Season with salt and pepper to taste before serving.

Notes

  • For added flavor, use homemade chicken broth.
  • You can substitute chicken thighs for a richer taste.
