- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 1 cup orzo pasta
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 lemon, juiced
- 2 cups baby spinach
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat. Add chicken breasts and cook until browned on both sides. Remove and set aside.
- Add onion, carrots, and celery to the pot. Sauté until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute.
- Pour in the chicken broth and bring to a boil.
- Add the orzo, thyme, oregano, and the reserved chicken. Reduce heat and simmer for 10 minutes.
- Stir in lemon juice and baby spinach. Cook for an additional 2 minutes.
- Season with salt and pepper to taste before serving.
