Lemon Crumb Bars – Buttery, Bright & Easy to Make

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, combine flour, granulated sugar, and salt. Cut in butter until mixture resembles coarse crumbs.
  3. Press the mixture into the bottom of the prepared baking dish and bake for 15 minutes.
  4. In a separate bowl, whisk together eggs, lemon juice, lemon zest, and powdered sugar until smooth.
  5. Pour the lemon mixture over the baked crust and return to the oven for another 20-25 minutes.
  6. Once set, remove from oven and allow to cool completely before cutting into bars.

Notes

  • For extra flavor, consider adding a teaspoon of vanilla extract to the lemon mixture.
  • These bars can be topped with additional powdered sugar for a sweeter presentation.
