Loaded Cauliflower and Broccoli Casserole

A delicious twist on a classic casserole, loaded with cauliflower, broccoli, and turkey bacon for a healthier option.

Ingredients

  • 1 head cauliflower, chopped
  • 1 head broccoli, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup plain Greek yogurt
  • 4 slices turkey bacon, cooked and crumbled
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cauliflower, broccoli, Greek yogurt, garlic powder, onion powder, salt, and black pepper.
  3. Mix in the crumbled turkey bacon and half of the cheddar cheese.
  4. Transfer the mixture to a greased baking dish and top with the remaining cheddar cheese.
  5. Bake for 25-30 minutes until bubbly and golden brown.

Notes

  • For added flavor, consider adding chopped green onions on top before serving.
  • This dish can be made ahead of time and baked before serving.
