Mac and Cheese Stuffed Peppers

Delicious and comforting, these Mac and Cheese Stuffed Peppers bring together the rich flavors of turkey bacon and cheesy goodness in a vibrant pepper.

Ingredients

  • 4 large bell peppers
  • 1 cup elbow macaroni
  • 4 slices turkey bacon, cooked and chopped
  • 2 cups shredded sharp cheddar cheese
  • 1 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup breadcrumbs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Cook the macaroni according to package instructions. Drain and set aside.
  4. In a large bowl, combine the cooked macaroni, turkey bacon, cheese, milk, garlic powder, onion powder, salt, and pepper.
  5. Stuff the mixture into the prepared bell peppers and place them upright in a baking dish.
  6. Sprinkle breadcrumbs on top of each stuffed pepper.
  7. Bake for 25-30 minutes or until the peppers are tender and the cheese is bubbly.

Notes

  • For a spicier kick, add diced jalapeños to the stuffing mixture.
  • Feel free to use different types of cheese for variation.
