Mamaw’s Chicken and Rice Casserole

This classic dish combines tender chicken with creamy rice and a blend of flavorful ingredients for a cozy meal.

Ingredients

  • 2 cups cooked rice
  • 1 pound chicken, cooked and shredded
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine cooked rice, shredded chicken, cream of chicken soup, chicken broth, mixed vegetables, onion powder, garlic powder, salt, and pepper.
  3. Transfer the mixture to a greased 9×13 inch baking dish and spread evenly.
  4. Top with shredded cheddar cheese.
  5. Bake for 25-30 minutes, or until heated through and cheese is melted.
  6. Let cool for a few minutes before serving.
