- 4 large russet potatoes
- 1 cup cooked turkey bacon, chopped
- 1 cup Greek yogurt
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
- Preheat the air fryer to 400°F (200°C).
- Wash the potatoes and prick them a few times with a fork.
- Air fry the potatoes for about 35 minutes or until tender.
- Once cooked, let the potatoes cool slightly, then slice them in half lengthwise and scoop out the insides into a bowl.
- Add cooked turkey bacon, Greek yogurt, mozzarella cheese, green onions, garlic powder, paprika, salt, and pepper to the potato insides. Mix until well combined.
- Stuff the mixture back into the potato skins.
- Return the stuffed potatoes to the air fryer and cook for an additional 10 minutes until golden and heated through.
- Remove from the air fryer and serve hot.
Notes
- For a vegetarian option, omit the turkey bacon.
