Mediterranean Air Fryer Twice Baked Potato

A deliciously healthy twist on twice baked potatoes, featuring Mediterranean flavors and crispy turkey bacon.

  • 4 large russet potatoes
  • 1 cup cooked turkey bacon, chopped
  • 1 cup Greek yogurt
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Wash the potatoes and prick them a few times with a fork.
  3. Air fry the potatoes for about 35 minutes or until tender.
  4. Once cooked, let the potatoes cool slightly, then slice them in half lengthwise and scoop out the insides into a bowl.
  5. Add cooked turkey bacon, Greek yogurt, mozzarella cheese, green onions, garlic powder, paprika, salt, and pepper to the potato insides. Mix until well combined.
  6. Stuff the mixture back into the potato skins.
  7. Return the stuffed potatoes to the air fryer and cook for an additional 10 minutes until golden and heated through.
  8. Remove from the air fryer and serve hot.

Notes

  • For a vegetarian option, omit the turkey bacon.
  • Feel free to customize the herbs and spices according to your taste.
