Mediterranean Egg Muffins

A delicious and healthy recipe for Mediterranean Egg Muffins packed with turkey bacon and veggies.

  • 6 eggs
  • 1 cup diced turkey bacon
  • 1 cup chopped spinach
  • 1/2 cup diced bell peppers
  • 1/4 cup feta cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, salt, and pepper.
  3. Add turkey bacon, spinach, bell peppers, and feta cheese. Stir to combine.
  4. Grease a muffin tin and pour egg mixture evenly into each cup.
  5. Bake for 20-25 minutes or until the tops are lightly golden and a toothpick comes out clean.
  6. Let cool for a few minutes before removing from the muffin tin.
