Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook orzo pasta according to package instructions, then drain and rinse under cold water.
  2. In a large bowl, combine cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  3. Add the cooled orzo to the vegetable mixture.
  4. In a separate small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour dressing over the salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
