- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Cook orzo pasta according to package instructions, then drain and rinse under cold water.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
- Add the cooled orzo to the vegetable mixture.
- In a separate small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
