  • 4 bell peppers
  • 2 cans tuna, drained
  • 1 cup cooked quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix together the tuna, quinoa, cherry tomatoes, red onion, olives, feta, olive oil, oregano, salt, and pepper.
  4. Stuff the mixture into the bell peppers.
  5. Place the stuffed peppers in a baking dish and cover with foil.
  6. Bake for 25-30 minutes until the peppers are tender.
  7. Remove foil and bake for an additional 5-10 minutes for a golden top.
  8. Serve warm.
