Ingredients

  • 1 cup diced cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons preserved lemon, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • salt and pepper to taste

Instructions

  1. In a large bowl, combine the white beans, cucumber, cherry tomatoes, feta, red onion, and preserved lemon.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
