Mexican Street Corn Soup

Ingredients

  • 4 cups fresh corn kernels
  • 1 cup diced turkey bacon
  • 1 onion finely chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • Black pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add onion and sauté until translucent.
  3. Add corn, chicken broth, chili powder, cumin, salt, and pepper. Bring to a boil.
  4. Reduce heat and let simmer for 15 minutes.
  5. Stir in heavy cream and cooked turkey bacon. Cook for another 5 minutes.
  6. Serve hot, garnished with fresh cilantro.

Notes

  • For a vegetarian version, replace turkey bacon with smoked paprika for flavor.
  • Add jalapeños for some heat.
