8 ounces turkey bacon
1 pound ground turkey
1 medium onion, chopped
4 cloves garlic, minced
28 ounces crushed tomatoes
4 cups chicken broth
12 ounces uncooked lasagna noodles, broken into pieces
1 tablespoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/4 cup fresh basil, chopped
Instructions
In a large pot, cook the turkey bacon until crispy. Remove and set aside, then sauté onion and garlic in the bacon grease until soft.
Add ground turkey and cook until browned.
Stir in crushed tomatoes, chicken broth, noodles, Italian seasoning, salt, and pepper. Bring to a boil.
Reduce heat and let simmer until noodles are tender.
Stir in ricotta and half of the mozzarella cheese until melted and well combined.
Serve hot and top with the remaining mozzarella, Parmesan, and fresh basil.
Notes
For a richer flavor, use a mix of ground meats.
