One-Pot Cajun Chicken Pasta

A delectable one-pot dish that combines the bold flavors of Cajun spices with tender chicken and pasta.

  • 1 pound chicken breast, cut into bite-sized pieces
  • 12 ounces penne pasta
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup diced tomatoes
  • 1 cup bell peppers, sliced
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken pieces and season with Cajun seasoning, garlic powder, and onion powder.
  2. Cook until the chicken is browned, about 5-7 minutes.
  3. Add the bell peppers and cook for another 2-3 minutes.
  4. Stir in the penne pasta, chicken broth, and diced tomatoes. Bring to a boil.
  5. Cover and reduce heat to a simmer. Cook for 15 minutes or until the pasta is tender.
  6. Stir in heavy cream and season with salt and black pepper as needed.
