  • 1 cup all-purpose flour
  • 1 1/2 cups water
  • 1 tablespoon salt
  • 1 cup dried cranberries
  • zest of 2 oranges
  • 1/4 cup orange juice
  • 1/2 teaspoon active dry yeast

Instructions

  1. In a large mixing bowl, combine the bread flour, all-purpose flour, and salt.
  2. In a separate bowl, dissolve the yeast in warm water and let it sit for about 5 minutes.
  3. Add the yeast mixture, orange juice, and orange zest to the flour mixture. Stir until a sticky dough forms.
  4. Add the cranberries and mix until evenly distributed.
  5. Cover the bowl with a damp cloth and let it rest for 12-24 hours at room temperature.
  6. After resting, turn the dough out onto a floured surface and shape it into a round loaf.
  7. Place the loaf on a floured baking sheet, cover it, and let it rise for about 1-2 hours.
  8. Preheat your oven to 450°F (230°C) and place a Dutch oven inside to heat up.
  9. Once the oven is hot, carefully place the dough into the Dutch oven, cover it, and bake for 30 minutes.
  10. Remove the lid and bake for an additional 15 minutes until the crust is golden brown.
  11. Let the bread cool on a wire rack before slicing.
